Creamy pasta with silken tofu

Recipe:
Ingredients:

2 cups pasta of choice
1 medium red onion, chopped
1/3 cup fresh sweetcorn
10 oz silken tofu
1/2 cup plant based milk
2 cloves garlic
2 tbsp nutritional yeast
1 tsp salt
1 tsp cumin
Juice of 1/2 lemon
.
Instructions:
Cook the pasta according to packaging instructions. Meanwhile, sautรฉ the onion and the sweetcorn in a non-stick frying pan until softened, and add the tofu, plant based milk, garlic, nutritional yeast, salt, cumin and lemon to a blender or a food processor. Blend until very smooth. Pour the sauce into the frying pan and stir to heat up for a few minutes. Drain and rinse the pasta and combine it with the sauce in the frying pan before serving.
