Wonton Tacos Cups! These are super freakin cute and you could have them as snacks, they’re perfect for “game day” finger food or Taco Tuesday dinner. They look super fancy- smancy but are quite easy to make.
48 wonton wrappers
2 tsp olive oil
1 lb extra lean ground beef (for vegan friendly option I used crumbled tofu or beyond meat crumbles)
1 tsp garlic
1/2 cup onion
1/2 cup bell peppers
1/2 cup water
1/3 cup ketchup
3 tbsp taco seasoning (low sodium)
1 cup shredded cheese (use dairy free cheese for vegan option)
Pre heat oven to 375 F & oil two 12 cup muffin tins (I used silicone so no oil required)
Insert two wonton wrappers in each cup overlapping to make 8 points and press down firmly. Bake for approx. 8 minutes be careful not to burn them. Remove from oven.
While wontons are baking prepare filling.
Cook beef or tofu, add garlic and break up any large pieces of beef or tofu. Add onions & peppers cook for an additional 3 minutes. Add water, ketchup & taco seasoning. Mix well cook for 3 more minutes. Remove from heat.
Sprinkle 1 tsp cheese in bottom of wonton cups, top with beef/ tofu filling, followed by another 1 tsp of cheese. Return to oven bake for 3 minutes until cheese is melted.
Serve immediately with fav toppings.
