SUKTO RECIPE?
INGREDIENTS
*Aloo 1 medium size
*Brinjal 2 small size
*Karela 1 small / half of a big karela
*Raw banana 1 no.
*Drum sticks 1
*Parwal 1no
*Urad dal sun-dried badi / mangodi 6 to 8 nos small size
*Panchphoron ½ tsp
*Tejpata 2
*Mustard seeds ½ tsp
*Posto/Khuskhus 1 tsp
*Coconut 2 tbsp
*Ginger ½ inch
*Green chilli 1
*Refined Oil 5 tbsp
*Salt to taste
*Sugar a pinch
*Milk ½ cup
*Water ¼ cup
*Desi ghee 1 tsp
STEPS OF PREPARATION
*Wash n cut all the vegetables length wise , keep aside.
*In a mixijar add mustard seeds , khuskhus , coconut , ginger , green chilli n make a paste by adding little water , keep aside.
*Heat oil in a kadhai on low to medium flame.
*Add all the sun-dried badi / mangodies , keep aside.
*Fry the Parwal , raw banana , brinjal n karela till golden brown n keep aside.
*Now add panchphoron , tejpata , aloo n drumsticks n cook covered for 4 minutes.
*Add fried vegetables except karela , mix well.
*Add masala paste , salt to taste n cook till vegetables get tender.
*Now add karela n fried badi / mangodies , mix well .
*Add little ¼ cup milk n a pinch sugar followed by little water.
*Cover n cook for 1 minute , switch off the flame.
*Pour a little ghee on top n serve hot with steamed rice.
