been having these dishes on repeat lately and they hit every single time. quick, simple n delicious
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. tahini tofu stir fry
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
for the tofu marinade:
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
chopped tofu / 3 tbsp tamari (or soy sauce) / 2 tbsp tahini / 1 tsp garlic granules / 1 tsp smoked paprika / salt & pepper
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
mix ingredients together to form a paste and coat your tofu. fry in some oil until it starts to crisp up and add your veg & rice. add a splash more tamari and garlic granules to taste. serve with a drizzle of tahini and sesame seeds
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. chickpea & avocado smash on toast
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
mash together a handful of chickpeas, 1/2 large avocado and 1-2 tbsp vegan cream cheese (i used @nushfoods) until smooth. season with lemon juice, garlic granules, chilli flakes and salt to taste
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
spread a layer of vegan cream cheese (or butter) on a piece of toast and add your chickpea avo smash. i topped mine with chopped tomatoes, fresh basil and @goodnudefooduk ginger & turmeric sauerkraut
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. green pea pasta salad
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
cook pasta and set aside to cool. roast chopped red peppers and red onion in olive oil, salt, garlic granules and smoked paprika for 20 minutes until soft
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
once cooled, add the pasta & veggies to a bowl of chopped lettuce and sweetcorn. add a generous splash of tamari/soy sauce, some nutritional yeast, garlic granules and salt & pepper to taste. i served mine with chilli flakes and sauerkraut
