?️Three bean and lentil chilli?️⠀

Recipe for a big batch (about 7 serves)⠀

– 1 tsp olive oil⠀
– 2 brown onions, sliced⠀
– 3/4 cup dry green lentils⠀
– 4 tbsp tomato paste⠀
– 400gr vegan mince⠀
– 2 cups passata⠀
– 1 can borlotti beans⠀
– 1 can cannelini beans⠀
– 1 can black beans⠀
– 1 tbsp cumin⠀
– 1 tbsp paprika⠀
– 1 can corn⠀
– salt to taste⠀
– 1 tsp coriander powder⠀
– 3 tbsp polenta (or corn/tapioca flour mixed in a bit of water)⠀
– 2 rocotto peppers sliced, without the seeds⠀
– 3 1/2 cups vegan beef stock (or vegetable)⠀

– in a dutch pan or large sauce pan, heat up the oil. Add the onions and cook for about 3-4min⠀
– add the vegan mince and cook according to instructions.⠀
– add the lentil, tomato paste, paprika, coriander, cumin and salt. Cook for 3min, stirring often.⠀
– add the stock. Cook on low for 15min⠀
– add the beans, corn and passata. Cook for an extra 8min.⠀
– add the polenta to thicken the sauce and to give some extra flavour. Stir properly and cook for 1min⠀
Enjoy! I served mine with spelt pasta, coconut yoghurt, mashed avocado and topped with spring onions and chili flakes (and nutritional yeast – not pictured)⠀
