this west African peanut stew was BOMB. Protein and veggie packed and extremely flavorful. 😋 my favorite part about working from home 💻 is being able to make myself super fresh, hot lunches! the key is to find dishes i can make in under 30 minutes so i also have enough time to enjoy it during my lunch hour! this west African peanut stew was the perfect lunch!

*Serves 4*
1/2 large onion chopped
2 cloves garlic minced
1 tsp thyme
1 tsp chili powder
1 tsp garam masala
1 tsp salt
1/2 tsp maple syrup (or sugar)
3 tbsp peanut butter
2 tomatoes chopped
1 bell pepper chopped
1/2 broccoli chopped
1 cup coconut milk
15 oz can kidney beans
1/2 cup water
Cilantro and lime to garnish

1. Sauté onion and garlic in heated and lightly oiled pan.
2. Add spices, salt, sugar. Mix.
3. Add peanut butter, tomatoes, and bell pepper. Mix for 5 min.
4. Add remaining ingredients. Let the stew simmer for 15 minutes so the veggies are fully cooked.
5. Adjust spices. Serve over rice (i did cauliflower rice). Garnish with lime and cilantro.
6. Enjoy!
