This week’s podcast guest Rebecca @theplantbasedpom is a baking and recipe extraordinaire.

I asked Bec for one of her favourite sweet recipes and she sent through five and said, it’s too hard, you choose. So here it is…

STICKY DATE PUDDING by @theplantbasedpom

This recipe is super quick and easy plus you can freeze it into individual portions. Great for that late night sweet-tooth fix!

Ingredients:

?Pudding:
2 cups of dates very roughly chopped
1 cup soy milk
1/2 cup water
1 tsp vanilla extract
1 tsp baking Soda
3/4 cup brown sugar
1 & 1/2 cups self raising flour
1/2 cup vegan butter @nuttelexspread

?Sauce:
3/4 cup butter
1 & 1/2 cups brown sugar
1 Cup @naturescharm_au coconut evaporated milk (can be substituted with coconut/plant based milk)
Pinch salt

Method:
?To make the pudding:
➡️Preheat your over to 190C and grease a 8×8 tin
➡️Place the dates, milk, vanilla & water in a saucepan and bring to the boil.
➡️Reduce to a simmer and cook for around 10 mins, stir in the baking soda and then allow to cool.
➡️Beat the brown sugar and the butter together until smooth and creamy
➡️Sift in the flour then gradually add the cooled date mix, folding it in to create a batter – do not over mix!
➡️Tip into your tin and bake for around 25 minutes until it bounces back when pressed in the middle.

?To make the sauce:
➡️Place the butter and sugar into a saucepan and heat on medium untill they have melted into a syrup – you need to stir it, don’t burn it!
➡️Add the salt, water and the @naturescharm_au evaporated coconut milk.
➡️Bring to the boil stirring continuously.
➡️Reduce to a simmer and cook until thickened to your liking, remember it thickens as it cools too!

⚠️Warning: if you cook the sauce for too long it will be like hard toffee when it cools, not great, ouch my teeth⚠️

Serve the pudding drowning in sauce and with a big scoop of vegan vanilla ice cream.
