This week I made 1-Pot Everyday Lentil Soup (Minimalist Baker)
On a side note, I am also sharing my favorite ? apple cider from Trader Joe’s! I highly recommend it, it has no sugar added, just the goodness of apples and some spices. To boost up the holiday flavors, I add some extra mulling spices. Mmmm, it makes an excellent pairing for cooking! ??
Easy-easy!???
First, I prepped all the ingredients☝️
Mince 4 cloves of garlic, dice 2 shallots
Slice 4 carrots, 4 stalks of celery
Peel and chop about 8 small potatoes
Cook 1 cup of Toor Dal (can use what ever lentils you have)
Chop a handful of kale
In a large pot, heat oil over medium heat, once hot add shallots and a couple stalks of rosemary, cook for about 5 minutes.
Add garlic, carrots, celery, cook for 5 minutes
Add salt and pepper
Add potatoes, cook for 2 minutes, then add 4 cups of vegetable broth and lentils.
Cook for 20 minutes. 2 minutes before the end, add kale.
