Oil is not as bad for you as people make it out to be. In fact vegetable oil (what I used) has been proven to improve metabolism, decrease the risk for heart-disease, are carriers of fat-soluble vitamins, and contain poly/mono I saturated fats which help to lower cholesterol.
?1 cup all purpose flour (Whole wheat or gluten free flour should be fine too just make sure it’s “all purpose” and not like almond or coconut flour)
?3 cups of canned sweet corn
? 1 flax egg
?3/4 cup plant-based milk (unsweet)
?4 Tablespoons of red curry paste
?olive, vegetable, or any other oil for frying
?1 Tablespoon of baking powder
?make your flax egg in a small bowl and let it sit for 10 minutes
?In a food processor combine half of your corn with the flour and milk and mix until smooth
?pour into a mixing bowl and combine other ingredients (rest of the corn, flax egg, red curry paste)
?pour a small layer (1-2cm) of oil into a pan over medium heat and wait until small bubbles start to appear
?place about 2 tablespoons of batter onto the frying pan and cook for 3-4 minutes each side until crispy
