This was my approach on a vegan Alfredo sauce made out of cooked cauliflower and cashews, topped with pan fried mushrooms and smoked tofu. this was so delicious, fluffy and light, I had to work really hard on controlling myself not to inhale everything of it?.

and it was simple too. I cooked the cauliflower (broken up in smaller parts) for about 10 minutes. it had still a little bite. presoaked some cashews in hot water for an hour. slightly fried some leek and put it all into a blender. added half a cup of a plandbased drink, 1 1/4 tsp salt, 1/2 tsp pepper, a good shot of soy creme, and some yeast flakes for a more cheesy taste. you have to try a bit with the right amounts of the ingredients to hit your taste. you could add some lemon juice to or some herbs and spices like nutmeg. should work great too??
