This Skillet Spaghetti Casserole from Food Network combines two comfort food classics to make it a dish you won’t be able to resist. It gets a surprisingly flavor boost from the capers & golden raisins, while the mozzarella cheese & eggs add a little extra protein. Check out the recipe below.
Skillet Spaghetti Casserole
Makes: 6 to 8 servings
*kosher salt & freshly ground black pepper, to taste
*1/4 cup drained brined capers
*1/4 cup golden raisins
*1/4 tsp crushed red pepper flakes
*4 tbsp (1/2 stick) unsalted butter, divided
*8 large eggs
*2 tbsp extra-virgin olive oil
*1/2 cup grated Parmesan cheese
*8oz shredded mozzarella cheese
1. Preheat broiler to high with a rack set 6 inches from the heat source. Bring a large pot of salted water to a boil.
2. Add pasta to the water & cook according to package directions. Drain & immediately return to the pot. Toss pasta with capers, raisins, red pepper flakes, & 3 tbsp butter until the pasta is well coated.
3. Beat the eggs with the oil, 1 teaspoon salt, & a few grinds of pepper in a medium bowl. Heat the remaining 1 tablespoon of butter in a large, oven-proof nonstick skillet over medium heat. Add beaten eggs & cook, without stirring, until just set on the bottom, about 30 seconds. Then lift some of the set eggs with a spatula, letting the uncooked egg flow down to the bottom of the skillet. Repeat until the eggs are mostly set but still runny. Nestle the pasta evenly into the eggs & scatter the Parmesan & mozzarella cheese on top. Broil, watching carefully, until the cheese is melted & the eggs are fully set, about 3 minutes. Cut into wedges & serve.
