This Month Is Flying By, And I Can’t Believe Thanksgiving

This month is flying by, and I can’t believe Thanksgiving is literally next week😩 I’ll be having a primarily vegan Thanksgiving and I’m looking forward to eating slow, relaxing and enjoying leftovers for as long as possible. One of the dishes I’ll be making for sure, is Vegan Sweet Potato Soufflé. I use my mom’s recipe with just a few swaps to make it vegan.

🥚▪️I replace the egg with a “flax egg”
🐄▪️I replace cow’s milk with Almond Milk
💥▪️I substitute the marshmallows ( which contain gelatin) for vegan ones.

Swapping out some of the traditional non-vegan ingredients in these Thanksgiving dishes didn’t require sacrificing flavor. Here’s a great debate 😀….Do you boil your sweet potatoes with the skin on? or Do you peel them first, then boil?
