This might be the best batch ever!
My Vegan Peanut Butter cookies.
These are made with dates, peanut butter & powdered peanut butter, and so easy and quick to make.
I love having a few goodies in the freezer for those times we are wanting something without all the refined white flour & sugar.
12-14 pitted medjool dates
1/2 cup powdered peanut butter
1/2 cup peanut butter
1 Tablespoon chia seeds
2 teaspoons baking powder
2-3 Tablespoons almond milk
1️⃣ Prehead oven time 350F
2️⃣ Pulse the dates in food processor until mixed in small pieces. Don’t over process or it will form into a hard ball.
3️⃣ Add the powdered peanut butter, peanut butter, baking powder and chia seeds and pulse until well combined.
4️⃣ As you pulse the ingredients, slowly add the almond milk and mix until well combined.
5️⃣ Scoop dough with cookie scooper and form into 12 small balls.
6️⃣ Arrange on parchment lined cookie sheet and press with fork.
7️⃣ Bake for 12-14 minutes.
8️⃣ Remove from oven, let cool briefly and then place on cooling rack.
9️⃣ Enjoy or place in freezer.
*I use unsalted organic peanut butter*
