This is the salad that recently won in a recipe survey @goyaoliveoil conducted. It’s an original avocado salad with sweet potato, chickpeas, quinoa, chia seeds and spinach! and here is the step by step recipe.

◼️Ingredients (serves 4):
• A bag of baby spinach
• 1 large avocado
• 1 large sweet potato
• 1 cup of boiled or canned & drained chickpeas
• 3 tablespoons of Goya capers
• 1/2 lemon
• 1/2 cup of Goya Organics extra virgin olive oil
• 1/4 cup of balsamic vinegar
• 2 tablespoons of honey
• 1 tablespoon of sesame seeds
• 1 tablespoon of chia seeds
• 1 tablespoon of sea salt
• ½ teaspoon of salt and pepper.

◼️Preparation:
1. Separate the spinach leaves from the stems. Place them in a bowl and cover with water, add a tablespoon of sea salt and stir.
2. After five minutes, the salt will have helped to wash the leaves. Drain and pay dry.
3. Peel the sweet potato and cut it into cubes. Fry and set aside.
4. Cut the avocado into cubes. To avoid it oxidizing, drizzle the lemon juice on it immediately.
5. To prepare the dressing, in a small bowl mix Goya Organics Extra Virgin Olive Oil, balsamic vinegar, honey, a pinch of black pepper and salt to taste until emulsified.
6. In a salad bowl, mix the spinach, cubes of sweet potatoes, avocado, capers, chickpeas and the dressing.
7. Sprinkle sesame and chia seeds, previously hydrated in water for at least 3 hours, and serve. Healthy and Yum, yum, yum! ?
