This Is The Pumpkin Spice Loaf That I’ve Been Promising Yo



This is the pumpkin spice loaf that I’ve been promising you all! It’s made using the horrible stringy bits from a pumpkin. I’ve popped the recipe below 😊

Pumpkin spice loaf cake
.
1 and 1/2 cups of pumpkin purée (blend the stringy bits from the pumpkin)
2/3 cup caster sugar
1/2 cup margarine
2 teaspoons vanilla extract
2 cups self raising flour
1 tsp baking powder
1 tsp apple cider vinegar
2 tsp cinnamon powder
1 tsp mixed spice
1/2 tsp nutmeg

Icing ingredients
.
2 cups icing sugar
1/2 cup margarine
1 tsp vanilla extract
1/2 to 1 tsp of cinnamon (add as much of as little as you like)

1. Add the margarine and caster sugar to a bowl and cream together.
2. Add the pumpkin purée and mix in.
3. Add all the remaining ingredients to the bowl and mix together. If the mixture is a bit thick, add a splash of plant milk and mix in.
4. Grease and line a loaf tin and then pour the pumpkin cake mixture in. Pop in the oven at 180 degrees for 35-45 minutes or until a skewer comes out clean.
5. Whilst the cake is cooling make the icing. Pop the icing sugar, margarine, vanilla extract and cinnamon into a bowl and whisk together. You may need to add a splash of milk to help all the ingredients come together. Place the bowl in the fridge. Once the cake is cold, ice the cake and then enjoy!
