This Is From A Few Weeks Ago, I Just Completely Forgot About

This is from a few weeks ago, I just completely forgot about it as I was busy studying for exams. Anyways, this is a sweet potato and red lentil Dahl.?

The recipe makes about 4-6 servings as whenever I make it I make it for dinner for my family to have,

The ingredients are:
– 1 onion, finely chopped?
– 3 garlic cloves, diced ?
– 1 teaspoon of grated ginger
– 1 tablespoon olive oil
– 1 cup of red lentils
– 1/2 a sweet potato, chopped into cubes?
– 2 teaspoons of curry powder
– 3 cups of vegetable stock
– 1 bay leaf ?
– 1/2 a red capsicum
– 1/2 a cup of coconut milk ?
– Handful of baby spinach

Heat the oil and then fry the onion, garlic, ginger and bay leaf until the onions are soft and translucent.

Add the lentils and curry powder and fry for two minutes, stirring continuously.
Pour in the stock and coconut milk, and then add the capsicum and sweet potato.

Place a lid on it and let simmer for about 20 minutes, stirring occasionally to ensure the bottom doesn’t stick. Add more water or stock if needed.

Once the potato is soft and falling apart and the lentils have dissolved (I like to use a spoon to mush it up a bit so it doesn’t have any chunks) stir in the spinach for a minute or two then remove from the heat.
Serve immediately with some long-grain rice and /or naan bread.

I’ve finished all my exams and have now completed my first semester of university! I’m so glad it’s over and that I now get a month off.?
