আলু বাজা This is comfort food at its best my vegetarian simple Lunch of Aloo Bhaji (potato fry), tomato salad with Naga chilli, fried chilliies and Bangladeshi Zara Lebu.
The Aloo baja recipe is a simple one that requires a few ingredients:

🔴Ingredients🔴

🔥Finely sliced thinly cut potatoes best to baby potatoes with skin on I used one packet.
🔥3 medium onions finely sliced.
6-8 green chillies slit lengthwise.
🔥1 tsp turmeric powder.
Handful of chopped green coriander leaves.
🔥6 tbs of oil.

🔴Method🔴

👉🏼In a bowl wash the potatoes and pour one kettle of boiling water, cover and leave for 5 mins and pour in a colander and leave to drain.
👉🏼In a non stick frying pan add oil heat and add the onions and green chillies and cook until brown.
👉🏼Add the turmeric powder and salt stir and add the potatoes.
👉🏼Keep stirring the potatoes and cook until the potatoes have softened. This takes about 10-15 mins.
👉🏼Add the chopped coriander leaves stir take of the heat and enjoy.
