This is a surprisingly simple, healthy, and flavorful vegan stir fry that reheats well for lunch the next day! Takes less than 15 min to complete. What more can you ask for?

INGREDIENTS
Cauliflower, 1 large head boiled for 2 min, cut into florets
Tomatoes, 3 medium sliced
Vegan Fish sauce, 1 tbsp
Ketchup, 2 tbsp
Yellow Onion, 1 medium sliced
Garlic, 5 cloves minced
Salt, 1 tsp
White Pepper, 1 tsp

INSTRUCTIONS
Cut cauliflower into small florets and then cook in boiling water for 2 minutes. Drain and set aside. Heat 1 tablespoon cooking oil in large wok and add in garlic and onion. Stir for 1-2 minutes and add in tomatoes, ketchup, vegan fish sauce, salt, and white pepper. Stir for another 1-2 minutes and add in cauliflower. Adjust to taste and stir for another 2 minutes.
