Best Vegan Potato Salad

6 large potatoes cut into 4-5cm chunks boiled in salted water until just tender (not too soft). Then drain & spread out on a tray to cool
1 red onion finely diced
1 tspn garlic paste
2 tbspns chopped fresh dill
3 whole baby pickles (in dill) finely diced
2/3 cup vegan mayonnaise
3 tbspns Dijon mustard
3/4 tspn kelp flakes (or nori powder/very fine nori flakes)
50mls pickle juice
2 scallions finely sliced
A little salt & white pepper
Mix all the ingredients except the potatoes together in a large bowl. Refrigerate while the potatoes are cooling. Once the potatoes are cooled completely, place them in the bowl with the dressing & mix well. Top with more scallions & refrigerate for an hour to allow the flavours to develop.
