This chickpea egg omelette is a regular in our 🏑 Super easy to make and so satisfying!

Recipe ⬇️

Chickpea egg
🌱 1/2 cup chickpea flour
🌱 1 cup soy milk
🌱 2 tbsp nutritional yeast
🌱 1/2 tsp turmeric
🌱 1/4 tsp black salt
🌱 salt + pepper to taste

🌱 red peppers
🌱 onions
🌱 cherry tomatoes
🌱 mushrooms
🌱 spinach
🌱 tofu feta (optional)

Mix chickpea egg ingredients. Set aside. Coat a pan with a bit of olive oil on medium heat (or water if preferred). Sauté all veggies. Once veggies are cooked, remove from pan. Pour half of chickpea egg mixture into pan. Once cooked flip over to cook the other side, add cooked veggies on top and fold into omelette. Repeat with remaining mixture. 🌿
