This bread is BANANAS. B-A-N-A-N-A-S!! ?
I have finally gotten around to making banana bread. Only THREE months after everyone in quarantine did ?? But this is what happens when you live with five other people: bananas never reach the ripening point ?. Luckily last night I had 4 perfectly ripe bananas and so I decide to take the opportunity and bake this delicious VEGAN banana bread!! .
Here are the DEETS!
Vegan Banana Bread ? ?
1 Tbsp ground Flax Seeds, in 2 Tbsp warm water
3 Ripe Bananas
1/3 Cup plant Milk (I used oat)
1/3 Cup olive Oil
1 Tsp Vanilla Extract
1 Cup Sugar (I used monk fruit sweetener)
2 Cups All-Purpose Flour
2 Tsp Baking Powder
1/2 Tsp Salt
1 1/2 Tsp Cinnamon
1/4 Tsp Nutmeg
1/4 tsp all spice
1/2 Tsp Baking Soda
1 Tsp Apple Cider Vinegar
1/4 Cup pecans, Chopped
1/4 cup sliced almonds
1/4 cup chocolate chips
1- sift all the dry ingredients in separate bowl and set aside
2- mix the flax seeds and warm water and set aside
3- mash the bananas then mix in the olive oil, vanilla, plant milk and sugar
4- by now the flax seeds should have a sticky consistency so add to the wet ingredients and mix well
5- slowly add in the dry ingredients to the wet and mix well
6- lastly in small bowl add the baking soda and vinegar and let bubble then add to the mix
7- fold in the toppings (I personally prefer more chocolate so I added 1/2 a cup and lesser nuts but this is totally up to you)
8- place in a well oiled bread pan
9-bake at 350°F for 50-65 minutes (by then it was 1A.M and I didn’t realize I had the oven on 400°F but I covered the bread with foil halfway through and it did the trick)
