This Asian-inspired salad is so easy, very quick to make and so flavorful!! The pickled cabbage is a wonderful and healthy addition! It is rich in probiotics, aids in digestion and helps maintain a healthy gut flora, helping to stimulate the growth of good bacteria and boost immune system.
▪️arugula
▪️baby kale
▪️cucumber
▪️chopped apple
▪️pickled cabbage (I found at Whole Foods in fermented foods section)
▪️toasted sliced almonds
▪️avocado
Dressing:
▪️1 1/2 tbsp apple cider vinegar
▪️1 tbsp coconut aminos
▪️1/2- 1 tbsp maple syrup
▪️1 tsp toasted sesame oil
Whisk together and drizzle over salad. (I like to chop my greens as well so I can fit more in my bowl!)
Crushed red pepper, black sesame seeds for garnish
