Makes about 6

1/2 cup soy milk (or more as needed, see notes in method)
1 tbsp apple cider vinegar
1 tsp vanilla extract
1 cup plain flour or self raising
1 tbsp baking powder
1/4 cup sugar
Pinch of salt

*If using self raising flour I add 1 tsp baking powder instead of tbsp. I know the flour already has some but I need more more more!
*you can use other milks BUT for me, soy achieves the best and thickest results due to the fat content (mmm fat)

1️⃣ In a bowl combine the milk, apple cider vinegar & vanilla extract. Mix together and let it sit for a few mins. It’ll get thick.
2️⃣ Add the dry ingredients and mix. If the mixture is too thick add a little more milk (I’m talking if it looks like dough, add more milk) it should still be a thick batter.
3️⃣ Cook in a large pan on both sides and serve with your favourite toppings πŸ’« enjoy!
