These double chocolate NO-BAKE oatmeal cups are to die for!! They take less than an hour to make and they are beyond worth it. @isabels_vegan_sweets is a goddess of vegan sweets and I can’t thank her enough for the inspo!! .
For the base stir together:
1/2 cup rolled oats
1/4 cup oat flour
1/4 cup melted coconut oil
2 tbsp maple syrup
2 tbsp cocoa powder
1 tsp cacao nibs (optional)
Press 2/3 of the mixture into cupcake papers or a muffin tin and freeze for 20 minutes .
For the filling stir together:
1/2 cup melted dark chocolate (vegan)
1/4 cup almond butter
1 tbsp maple syrup
1 tsp vanilla extract (optional)
Add the chocolate mixture and remaining 1/3 oat mixture to the oat mixture out of the freezer. Freeze for 30 minutes and enjoy and then store in fridge! .
