@the_hungry_herbivore_ is hosting a virtual Italian night for #hostwiththehungryherbivore – the perfect excuse to make my fave quick pasta dish🍝 This is probably not the most traditional puttanesca but it’s super easy, can all be done in one pan and tastes so good😋

PENNE PUTTANESCA (2 servings):
• 2 servings penne pasta (or pasta of choice)
• 1 tin chopped tomatoes
• ~1/2 cup water (depends on how much pasta you’ve used)
• Veg of choice (I used carrots and aubergine)
• ~40g black olives
• ~1tbsp capers
• Few sprigs coriander, finely chopped (parlsey would probs work better but I had none☹)
• Optional – chilli flakes to garnish
> Boil water then add all ingredients except coriander to a pan
> Bring to boil then turn down to medium heat for 10mins
> Add coriander and cook for ~5mins, until pasta and veg are cooked through
> Serve with optional chilli flakes
