The recipe of Podi was shared by a dear friend Shiji who’s originally from Kerela & she very lovingly packed a generous amount of Podi for our family (we all love it) when we left singapore last year.

Podi is a South Indian spice powder which can be made with different ingredients. Here I’m sharing the recipe of simple Podi.

DAL PODI: Dry roast 1 cup urad split dal (white urad) with 3-4 dry red chillies. Let it cool at room temp. Grind it until it’s a fine powder with a pinch of hing & salt (according to taste). Mix Podi powder (However much you want) with melted ghee in a bowl. Store this Podi in an airtight container. I usually keep it refrigerated & it lasts upto a year.

HOW TO EAT PODI:
1: Put a tsp or more of dry Podi on hot boiled rice. Put a tsp of melted ghee. Mix well & enjoy.
2: Mix equal quantities of Podi & melted ghee. Enjoy with idli or dosa like you would eat them with chutney.
3: Sprinkle Podi (instead of alu masal) while making dosa.

Or eat in whatever way you like.

Try making this next time when you are cooking a South Indian meal to enhance the whole experience of this regional cuisine.
