The recipe for our vegan gluten free carrot cake recipe below, and the best part is, you don’t have to scroll down 80 pages of who knows what food blogs can possibly ramble about for so long before just giving the people what they want… a list of ingredients.
*3.5 cups gluten free flour of your choosing
*2 (Maui medium sized) mashed overripe bananas if you live in Hawaii, you know what I’m talking about
*3 cups shredded carrots
*1/2 c melted coconut oil
*1 1/4 c sugar or honey or other sweetener
*2 T flax meal stirred in separate bowl with 1/2 c water if using sugar, or 1/4 c if using honey or liquid sweeetener
*2 t baking soda
*2 t baking powder
*1 t salt
*1 T cinnamon
* 1 t nutmeg
*1/2 T vanilla
* 1 1/2T apple cider vinegar
Optional 1 cup nuts or raisins

Stir all of above together, and bake for 40 minutes (or might need more depending on your oven) in oiled baking sheet at 300 with fan on if you have a convection oven. If you don’t have a convection oven, it will take longer, but just check and when it’s not giggly anymore it should be done:)
