I love pasta salad. My favorite always involved the best of the best fresh mozzarella. I have not found a vegan fresh mozzarella recipe or on the grocery shelves that come close so I’ve been playing with pasta salad recipes to fill the void.  I used violife just like feta in this recipe and it’s a nice addition but to be honest this salad is just as delicious without if you can’t get your hands on it.    

16 oz pasta 
1 pint cherry tomatoes 
1/2 red onion 
1/4 cup kalamata olives 
1/2 head of Frisée
Large stalk of basil 
1 package violife just like feta 
Extra virgin olive oil
Balsamic Vinegar 
Garlic powder
Salt & Pepper

Cook pasta to al dente, run cold water over the strained pasta and let cool. Add the pasta to a large mixing bowl and toss with olive oil, a few cranks of salt and pepper, and a nice sprinkle of garlic powder.  

Clean and prep you veggies. Slice the onion into short slivers, half the cherry tomatoes, slice the olives, and chop up the Frisée.  Add the vegetables to the mixing bowl and drizzle in the balsamic, enough to lightly coat everything but not pool up at the bottom.  Tear up basil to top and crumble in the amount of feta to your liking. Mix everything up and enjoy!  

This salad can be served as a filling meal or a refreshing side. In non-covid times it’s the perfect thing to bring to a gathering to ensure their’s a hearty vegan option.
