The other day we needed to do the food shop badly but it was raining and tbh I was too lazy. ?
So I gathered what we had in the fridge and made this concoction.
It is stewed black bean and olive on a bed of mustard potato and carrot mash topped with caramelised onion. That’s the long title or stewed black bean for short ?
3 Potatoes that have seen better days
Dried carrot sticks ?
Two disheveled onions
Tbsp Brown sugar
Tbsp garlic granules
3 Tbsp plant based milk/ordinary milk
Boil potatoes and carrots in hot water with salt and pepper.
Cook thinly sliced onion in olive oil on a low heat for ten minutes. Once softened added brown sugar and balsamic vinegar until golden brown.
In a separate pan add black beans with the liquid from the can, olives, and tomatoes. Add garlic granules, paprika, and thyme to this and let it sit for 30 minutes. If it gets to dry add some water.
At this point I was on the phone to my family you don’t have to do this part ?
Once potatoes and carrots are soft. Drain all the water from the pot.
Add mustard and milk to potatoes and carrots and mash till smooth.
