3 medium ripe bananas
1/3 cup non-dairy milk – room temp
1/3 cup unsalted butter – melted
1/2 cup coconut sugar
1 tsp vanilla extract
1/2 cup quick oats
1 1/2 cup 1 to 1 Gluten Free Flour
1 tbsp ground chia or flaxseed
1 tsp baking soda
1/2 tsp baking powder
1/8 tsp sea salt
1/2 tsp ground cinnamon
3/4 cup chocolate chips
✨Preheat oven to 350°F. Line muffin tray with paper liners.
✨In a mixing bowl, add flour, oats, sea salt, baking soda, baking powder, sugar, chia, choc chips and cinnamon.
✨In a blender or food processor, purée bananas.
✨Add banana purée, butter, milk and vanilla to dry ingredients and until no clumps remain.
✨Pour into muffin tray, will fill approx 10-12 papers.
✨Bake for 20-23 minutes, or until the tops are golden brown.
✨Remove from oven and allow to cook in the tray for 5 min and then
Carefully remove each muffin and let cool on baking racks for 15-30 minutes, before transferring to an airtight container.
