The Mexican Quinoa & Sweet Potato Patty was a success! Recipe below 😘

Ingredients:
– 1 x Sweet Potato Cubed and boiled

– 1.5 cups of cooked quinoa

– 1 x Roasted Red Pepper

– 1/2 Japaleno Pepper seeded

– 1/4 Cup of Oat flour

– 3 Tbsp of flax seeds

– 2 x Flax Eggs ( 2 tbsp of flax meal and 6 tbsp of water)

– 1 x Clove of garlic

– 1/2 Red onion

– 2 x tsp Cumin

– 2 x tsp Chilli powder

– 1 x tsp Paprika

– Salt & Pepper to taste

– 1 Cup of oats

Directions:
Pre-heat oven to 400

1. Prepare flax egg and let sit for 10 minutes

2. Boil sweet potato and make quinoa

3. Roast red pepper

Step 2 & 3 can be done ahead of time

4. Add all the ingredients except for the oats and red pepper into a food processor and make sure all is well mixed, it should clump up but is still very sticky.

5. Add the red pepper and pulse until it’s chopped but not blended.

6. Scoop mixture into a bowl and fold the oats in. Add in any extra spices if desired and then let sit for 5 minutes.

7. Form mixture into patty’s on baking sheet and drizzle generously with olive oil.

8. Bake for 10 minutes then flip for an addition 5-7.

Eat in its own , in a lettuce wrap or on in between some delicious Kamut hamburger buns!
