The fried mushrooms are back! They were a great meat substitute for my plant-based tacos.

I wanted these tacos to be the perfect combination of color, flavor, and texture. They are layered with black beans, kale, bbq sweet potatoes, and fried mushrooms.

I preheated my oven to 400 and diced two sweet potatoes. Season with salt, pepper, bbq seasoning, and chipotle garlic seasoning. I let these bake for about 25 minutes while preparing the other ingredients.

I cooked a can of organic black beans with fresh garlic, oregano, lemon juice, and creole seasoning.

The kale was sautéed with Greek seasoning, salt, and pepper.

For fried mushrooms, Louisiana Crispy Cajun Fish Fry is my holy grail. I coated my clean mushrooms and placed in a sauté pan on medium heat. Pan fry until nice and crispy.

Organic yellow corn hard shells were used to hold all the veggies. I knew I wanted a nice crispy shell to balance all of the different textures.

Layer your black beans, kale, bbq sweet potatoes, and top with generous fried mushrooms!

Enjoy with a side of sliced avocado, queso, or chips and salsa!
