I’m not pretending I invented bean chilli, one pot cooking or the wheel, but this is literally a chop it up and chuck it in the pan type meal. It’s also mostly canned stuff so easy to rustle up if you’re looking for something cheap, filling and ridiculously tasty. NB the recipe will be somewhere on the Knorr website but it must have been down last night so I went with the ingredients list as per the packaging for the stock cube and hoped for the best.

2 tins mixed bean salad
1 tin chopped tomatoes1 tin green lentils
One onion
3 cloves of garlic
One @knorr smoked chilli & tomato stock pot
Two vegetarian stock cubes
75g sweetcorn

Chop up the onion and garlic and sauté in a pan for a few minutes. Drain the beans and lentils. Pop them in the pan. Add the tomatoes, then the stock pot. After a few minutes, crumble the stock cubes in. Mix it all up and add a little water if it is too thick. Let it cook on a low heat for about 30 mins, stirring occasionally.

I swear I could have eaten this all over again, it was that good. I’ve topped with a tbsp of Alpro plain yoghurt and 15g of Bute Island Foods vegan cheddar. ??
