The cold days are finally here ❄️ so we might as well eat something hot and comfy 🔥 This is my approach at what a VEGAN RAMEN 🍜 should look like, in order to be delicious and easy to make!

Ingredients (serves ~4):

(Broth)
– 1,5L Vegetable Stock
– 2 Garlic Cloves
– Soy Sauce (3 tbs)
– Miso Paste (1 tbs)
– a pinch of Ginger Powder or fresh
– Maple Syrup (1 tbs)
– 1/2 Noori Sheet or a few Dried Shitake Mushrooms

Garnish:

– 1 Pak Choi
– 1 Carrot
– 2 handfuls of Sugarsnap Peas
– Tofu (250g) + 1 tbs Miso Paste
– King Oyster Mushrooms (200g) + Smoked Paprika + Garlic Powder + Balck Pepper
– Sesame Seeds

Method:

1 – Cook your broth with all the ingredients, for about 20/30min.
2 – Cut the tofu in small pieces and coat with miso paste. Then, either fry it or send it to the oven for about 20min at 180c.
3 – Cut the king oyster mushrooms into thin slices and coat them in the spices. Then fry on each side until crispy.
4 – Add the pak choi and sugarsnap peas to the broth and cook them for about 5min.
5 – Prepare the noodles of your choice according to packaging instructions and serve them on a bowl. Add the broth and then the garnishes ✨🤤
