The classic deviled cashews aka kadju badun served island wide in Sri Lanka is a spicy snack that makes a perfect pairing with a nice cocktail or cold beer. Here is a super simple preparation to make this at home:
* 3 tbs coconut oil
* 1 tbs chili powder
* 3 sprigs rough chopped curry leaves
* 8 garlic cloves sliced
* 2 cups roasted unsalted cashews
* Sea salt
Heat oil on medium heat, add the curry leaves and cook for a couple of minutes, then add garlic, once garlic get a little color add cashew nuts, turn up heat and cook until cashew nuts turn golden.. turn off heat and add the chili powder and salt… stir until all the cashews are covered with the chili blend..Enjoy with a boozy cocktail…🥃
