Thai style Pumpkin and Ginger soup with noodles.
Ingredients
1.2 Kg Pumpkin, peeled n roughly chopped
2 medium sized carrots, roughly chopped
1 medium onion, chopped
2 large tomatoes, peeled n chopped
30g ginger, peeled n roughly chopped
Half a stalk of lemongrass, bruised
Juice of 2 limes
2-4 green chilli, chopped
2 tbsp “Squeeze of Lemon” blend from Savvy Spices
Salt to taste
2 tbsp Olive oil
3 cups water
1 packet of buckwheat udon noodles, cooked
Method
Heat oil in a big pot.
Add onions, sauté for couple of minutes.
Add tomatoes, ginger, lemongrass n chilies and cook till soft.
Add pumpkin, carrots, 1 tbsp of blend, salt and water. Bring to the boil then cover and cook on low heat till the pumpkin is mushy.
Blend in a processor or with stick blender in the same pot.
Add the lime juice and serve with cooked noodles with a sprinkle of blend.
Option: For creamier taste stir in some coconut cream.
