THAI GREEN CURRY by @themorningbasil

Ingredients:
▶ Fresh herbs – 1 cup; I used a combination of fresh Basil leaves, coriander leaves and mint
leaves
▶ 2 cloves of garlic
▶ Thumb sized piece of ginger
▶ 1 tsp salt
▶ 1 tsp Coriander powder
▶ 1/2 tsp roasted cumin powder
▶ 1 tsp honey
▶ 1 green chilli
▶ Juice of 1 lime
Stir fry some vegetables in 2 tsp oil. I used the following, but you can use the vegetables of
your choice:
▶ French beans chopped – 1/2 cup
▶ Cauliflower or brocoli – 1/4th cup (florets separated)
▶ Carrots chopped – 1/2 cup
▶ Onion chopped – 1
▶ Capsicum chopped – 1 large or 1/2 cup
▶ Zucchini chopped – 1 large or 1 cup
▶ 200 gms mushrooms
Method:
Add some salt (around 1 tsp) while stir frying the vegetables.
Now add the curry paste to the vegetables. Then add 400 ml of coconut milk. Boil for a few
minutes and then serve with rice or noodles.
Suggested garnishing:
Fried onions, peanuts
