Thai Green Curry ✨

I based this off a recipe I made at a cooking course in Thailand, which was one of the best curries I’ve ever had. Hope you enjoy my take ✌🏽

This recipe serves two hungry people or three not so hungry people 😋

Ingredients:
400ml coconut milk
1 cup veggie stock
300g firm tofu, cut into 2cm cubes
3 tbsp green curry paste
2 tbsp soy sauce
1 tbsp coconut sugar (or palm sugar if you happen to have some)
1 head broccoli, cut into florets
1 can (425g) baby corn
1 stick lemongrass
1 cup rice

Method:
Heat coconut milk and stock in a wok (or pot if you don’t own a wok).
Meanwhile cook rice, keep lid on once done to keep warm.
Add curry paste once coconut milk mix is hot and stir until fragrant.
Add tofu cubes and bring to the boil. Add all vegetables (broccoli, lemongrass and corn), coconut sugar and soy sauce. Cook for a couple of minutes then serve with rice. I also topped it with coriander (not on mine though cause I don’t like it) and some spring onions.
