Tempeh tacos with sweet potatoes! ? Tempeh is basically like tofu but has a more firm texture and doesn’t take as long to prepare because you don’t have to press it. It takes on all flavors like tofu though. Great substitute for meat!
1/4 cup of water
1 tbsp maple syrup
2 1/2 tbsp chili powder
2 tsp smoked paprika
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1/2 a sweet potato or one small sweet potato
1 tbsp extra virgin olive oil
1 pack of tempeh. I used the original
3 tbsp soy sauce
1 green bell pepper
Mix all your liquids including the seasonings, except olive oil and soy sauce into a small mixing bowl, set aside.
With a box grater, grate your sweet potato until you have about 2 cups, set aside.
Heat your oil in a skillet, add in veggies and cook for 3-5 minutes. Then break up tempeh into the skillet and cook for about 3 minutes. Cook this down to break it up until it turns more golden. Add soy sauce and fold in your sweet potatoes and cook for another 4-5 minutes. Lastly, add your bowl of sauce and cook for an additional 3-5 minutes. This meal takes more time to prep than actually cook but it’s great for your next Taco Tuesday! ?
