🌮🌮Tempeh Taco Salad on this very very hot summer evening in Los Angeles. 🔥🔥

The salad was a bowl of mixed greens, black and green olives, sautéed tempeh, tomatoes, cucumbers, vegan cheddar, homemade guac, vegan sour cream, pickled cabbage, and cilantro.

Topped this beauty with a super simple cashew cream dressing which is one of my go-to faves!!

Here’s the recipe for that:
▪️1/2 cup raw cashews
▪️1/4 cup water (or more if it ends up too thick for your liking)
▪️1 garlic clove
▪️Optional: fresh lime or lemon juice, cayenne pepper, sea salt
Blend all ingredients until super smooth and enjoy! 🥰
