1️⃣ ZUCCHINI FALAFEL ? This is a must try! ?
We still got loads of zucchini at home, so here’s another delicious way to use it up!
Those falafel are crispy on the outside and soft on the inside, super flavoursome and complete with the yogurt-tahin-dip…?
??You can either shallow fry, fry, air-fry or bake the falafel.
RECIPE (3 servings each 356cal/19P/34C/11F):
-2 cups (360g) cooked chickpeas
-2 cloves garlic
-a bunch of parsley
-1 medium zucchini, shredded
-7 Tbsp (chickpea) flour
-1 Tsp each salt, ground coriander and cumin
-squeeze of lemon
-oil for frying
-4 Tbsp vegan yogurt
-1 Tbsp tahini
-salt to taste
-1/2 Tsp each garlic powder and Chili flakes
-squeeze of lemon
PULSE chickpeas, onion, garlic and parsley/COMBINE with the remaining ingredients and SHAPE into falafel/FRY until golden brown or BAKE at 200C/400F for 25mins/MAKE the dip
2️⃣ THE BEST VEGAN BROWNIES?? Oh yes, they deserve this name!
Those brownies are gooey on the inside, habe this lovely crackly too and taste just outrageously good…?
??Use chickpea flour for a gf version and let them cool down completely (even though it’s hard hehe ?).
Ad/ I’ve added 1 scoop Smacktastic Kiddy Schoko by @rockanutrition which is a flavour powder but it’s optional.
RECIPE (12 servings each 295cal/3P/41C/13F):
-6 oz (170g) dark chocolate
-1/2 Cup (110g) Margarine
-1/2 Cup (125ml) chickpea water
-1 1/2 cups (290g) sugar
-1 1/2 Cup flour (chickpea flour if gf)
-1/3 Cup (40g) cocoa powder
-3/4 Tsp baking powder
-OPTIONALLY: 1 scoop Smacktastic
MELT Margarine and chocolate/WHIP UP sugar and chickpea water for 2-3min until glossy (no stiff peaks)/STIR IN the chocolate mix and then the dry ingredients/BAKE at 175C/350F for 35mins/LET COOL DOWN completely
