Tbh I was never the biggest cranberry fan but Iโ€™m also convinced anything is good covered in white chocolate ๐Ÿ˜‹ If youโ€™re not a cranberry fan, these are amazing with any jam! Iโ€™ve done blueberry too & they turned out super yummy! These are super easy & pretty minimal ingredients too ๐Ÿ™Œ

White Chocolate Cranberry Shortbread Cookies! ๐Ÿ‘‡
Cookies:
1 cup almond flour
2 tbsp vegan butter (can sub oil)
3 tbsp maple syrup
1 tsp vanilla + pinch of sea salt

Filling:
1 cup cranberries
3 tbsp fresh orange juice
1/4 cup maple syrup
1/2 tsp cinnamon

Coating:
1 1/3 cup white chocolate chips

Make the cranberry filling by combining everything in a saucepan over med-high heat. Bring to a boil, gently lashing the cranberries with a fork. Once it starts to thicken, reduce the heat to low & let cook a few mins longer. Taste & adjust as needed. Let cool.
Make the cookies by combining everything until the dough forms. Roll into balls & set on a parchment lined cookie sheet. Flatten with your palm. Bake at 325F for 10-12 mins or golden around the edges. Let cool.
Top each cookie with some of the jam & place in the freezer for 15min to harden enough to dip into the white chocolate.
Melt the white chocolate & dip each cookie, returning to the freezer to set!
