Tasty crispy spicy ladies finger (bhindi) fry πŸ˜‹πŸ˜‹πŸ˜‹

INGREDIENTS

200 gm Fresh Long and Slender Ladies finger/Bhindi
ΒΌ Cup Chickpea Flour/Besan
ΒΌ Cup Cornstarch(Cornflour)/Rice Flour
Β½ tsp Caraway Seeds/Ajwain
1-2 tsp Coriander Powder
ΒΌ tsp Turmeric Powder
1 tsp Coarse Fennel(Saunf) Seeds Powder
1 tsp Red Chilli Powder or as per taste
1 tsp Amchur/Dry Mango Powder use as required
Salt as per taste
1-2 tbsp Lemon Juice
1-2 tbsp Oil
Chaat Masala as required to sprinkle

Recipe:

Prepare Bhindi

Wash nicely and clean the bhindi.
Cut each piece in half. Then again cut each half in half again, depending on the thickness of bhindi.

Mixing with spices

Add a tsp of oil to the cut pieces, nicely coat to all bhindi pieces.
Add besan, cornstarch, all the spices and half of the salt as required.
Add a 1-2 tsp of lemon juice to bind masala nicely .
Mix nicely, Make sure all the spices and flour is nicely coated. Keep for 5-10 mins.

Deep Frying or can be shallow fried

Heat oil in a kadhai/heavy bottomed pan.
Once the oil is hot enough(drop on piece and check ( It should sizzle).
Drop all the pieces carefully. If all the pieces are sticking together use a fork to carefully separate it.

Fry till bhindi is crispy and nicely fried.
