Tamale corncake deliciousness πŸ’›πŸŒ½

Ingredients:
-3 c gluten free tamale masa harina
-3 c warm water
-1 can of corn, drained and rinsed
-1/2 tsp salt
Toppings:
– Avocado
-tomatoes (colorful minis cut in half)
-pinto and black beans
-romaine lettuce
-salsa
– @mrsrenfros jalapenΜƒos

Directions:
1. Place masa harina in a bowl
2. Add in warm water and corn
3. Mix until incorporated
4. Place a pan on medium heat and add a splash of vegetable oil
5. Use a scoop (I use an ice cream scoop) to portion a few flat disks
6. Cook in oil until golden brown
7. Flip and cook on other side until golden brown
8. Top with your favorite toppings
