Devil’s Food “Cake”

? What a great way to use any ripe bananas laying around!
Recipe below:

Recipe: ⁣
-2 cups almond flour ⁣
-2 ripe bananas ⁣
-1/2 cup cocoa powder ⁣
-2 tbsp coconut sugar⁣
-2 tsp baking powder ⁣
-1/4 cup apple sauce ⁣
-2 tbsp cashew butter ⁣
-pinch of salt ⁣
-1 tbsp vanilla extract ⁣
-1/3 cup almond milk ⁣
-1 tbsp instant coffee (brand of choice) ⁣

Instructions: ⁣
Preheat the oven to 350°F/175C. Grease and line an 8 inch square tin with paper baking, ensuring two sides of the paper overhang.⁣⁣⁣⁣⁣⁣⁣⁣
-In a large bowl sift together the almond flour, cocoa powder, instant coffee, baking powder & salt. ⁣⁣⁣⁣⁣
-In a separate bowl, mix the mashed ripe bananas, apple sauce, cashew butter, coconut sugar, almond milk & vanilla extract. ⁣⁣⁣⁣
(You can use an electric mixer). ⁣⁣⁣⁣⁣
-Slowly add in the flour mixture and mix until combined.⁣⁣
-Bake your devil’s food “cake” for 30 to 35 minutes, or until a toothpick comes clean. Allow bars to cool for 20 minutes in pan and then remove from pan. Frost for your devil’s food “cake” (optional) ⁣⁣
-I used zveetz cold brew coffee mousse & it was a match made in heaven! ⁣
-If you don’t have this mousse, I would mix coconut cream about half a can, 1 tbsp of instant coffee & 2 tbsp of maple syrup with a hand or standing mixer. When you have an airy/fluffy texture I would add it on top! Allow to set in the refrigerator. You can top with some cacao powder. ⁣
-Cut into bars and enjoy! ⁣
