Taco Tuesday? How about Stuffed Lentil Mexican Bell Peppers Wednesday! This dish is packed with protein, low in carbs, and packed with flavor. Enjoy and Let’s Live Life Organically 💫

Ingredients:
*Bell Peppers
*Sour Cream or Greek Yogurt
*Cheese (Cashew, Soy, or Regular Cheese)
*Salsa
*Taco Seasoning (Flavor God)
*Chopped onions, bell peppers, & garlic

Preparation:
*Cut the Bell Peppers top and remove the stem in the middle.
*Boil Lentils until soft
*In a pot add Lentil, then include onions, bell peppers, garlic, sour cream or Greek yogurt, salsa, and taco seasoning and mix all together.
*Let the mixture cook for 10mins to absorb flavor.
*Take pan and place Bell Peppers on top. Add the lentil mixture and top with cheese if you’d like.
*Place in oven and cook for 20mins on 310-350 degrees.
