Cauliflower is such a versatile vegetable and can be crafted into so many different vegan delights. But my favourite is the mighty cauliflower buffalo wing 🙌 I’ve made these several times but only have the one (not-so-stylish) picture because they’re so good I forget to snap them before tucking in ☺️

These are super easy with super tasty results 🙌 they’re my party trick and my partners favourite thing I make! I’m not so great at handling heat, so I make mine with sweet chilli sauce as opposed to something more fiery as the recipe suggests 🔥

My wings are pictured with baked corn on the cobs (smothered in @vitalite, salt and smoked paprika), homemade avo mash, cauliflower leaves (baked in olive oil and salt) and slices of red pepper (baked in left over hot sauce)

R E C I P E ⬇️ #leonfastvegan
– Heat the oven to 180 degrees
– Remove cauliflower leaves (save for baking!), split florets into bite size chunks
– Whisk 90ml plant milk, a tsp of cider vinegar and 75ml of oil together
– In a large bowl mix 4 tbsp of plain flour, 1 tbsp of cornflour, 2 tsp of smoked paprika, 1 tsp mustard powder, 2 tsp of garlic powder, salt and pepper together
– stir the wet ingredients into the dry, mix to make a batter
– Pop panko breadcrumbs in a separate bowl
– Dip each floret into the batter, work into the crevices to give a full coating
– Dip into the Panko breadcrumbs for a full coating
– Place on a lightly greased baking try, repeat until all florets are done
– Whisk remaining hot sauce and a tbsp of oil together and set aside
– Bake for 15 mins turning once half way through
– Using tongs, dip each floret into the hot sauce for a good coating and return to the baking tray
– Bake for a further 20 minutes the coating is golden and crunchy 🙌 (unless using sweet chilli like me in which case they remain wet and sticky!)
