Switching things up today (something savory for once lol) and sharing w y’all the most amazing SPICY PEANUT tofu stir fry!! It’s also so easy to make!🌱

Ingredients (1 serving)
Stir fry:
1/2 block of tofu
1 cup spinach
1/2 green pepper
1 shallot
2 tsp corn starch
Finely chop the shallot and chop the green pepper. Sauté in a minimal amount of sesame oil over medium high heat and season with salt and pepper. Then add spinach and cook until spinach is cooked down. Remove veggies from pan to a small bowl. add a little more oil over medium high heat and add tofu and cornstarch. Cook until tofu is browned on all sides and then add back in the bowl of sautéed veggies and the spicy peanut sauce. Season with salt and pepper and top with more red pepper flakes! I also served mine with half an avocado and a little bit of jasmine rice. Enjoy!!✨✨

Sauce:
2 tbs low sodium soy sauce
1 tbs sesame oil
1 tbs @smuckersbrand natural crunchy PB
1 tbs water
2 cloves minced garlic
1 tbs agave
1/2 tsp red pepper flakes
(Whisk together all ingredients)
