🌿 Sweet & Sour Tofu 🌿

This recipe was asked after by so many people so here you are!!! Absolutely one of our favs, we can’t get enough!

Ingredients (makes 4):

600g firm tofu
1 cup of cornstarch + more if needed
Oil to shallow fry
Marinade:
1/3 cup of soy sauce
1/4 cup of kecap manis

1 red large capsicum
1 yellow large capsicum
1 brown onion
1 Tbsp oil
5 pineapple rings
Salt and pepper to taste
1/2 tsp crushed ginger
1 tsp crushed garlic

1 1/2 cups of uncooked white rice

Sauce:
2/3 cups of pineapple juice
2/3 cups of water
2 Tbsp vinegar
1 Tbsp soy sauce
1/3 cup of heaped brown sugar
2 Tbsp of ketchup
Premixed 1 Tbsp + 1 tsp of cornstarch with 1 Tbsp of water

Garnish:
White sesame seeds
Chopped spring onion

METHOD:
Press firm tofu to remove excess water. In a shallow dish or container mix the soy sauce and kecap manis marinade. Tear apart the tofu block into small chunks and marinade in the dish. Heat up a wok or frypan with 1 Tbsp of oil on high heat. Cut the capsicums and onion into square bite-size chunks. Once the oil is hot, stir fry the capsicum and onion with the crushed garlic, ginger, salt and pepper until just soft (approx 6-7min). Stir constantly so it doesn’t burn. Chop each pineapple piece into 6 pieces and add it into the stir-fry and sauté for a further 2 min. Once done, set aside. In a fresh frying pan, heat up 2-3cm of oil and put cornstarch in a bowl. Drain the marinade from the tofu and individually coat eat piece of tofu in a thick layer of cornstarch. Shallow fry in the oil until golden brown and crispy all over (turning if needed) then set aside on a plate. Repeat with all of the tofu. In a small pot mix together the sauce ingredients. Heat on medium heat and stir frequently until the sauce thickens (this can take a wee while and will thicken more upon cooking). Meanwhile, In a separate large pot, heat up water and boil the white rice until cooked, drain and set aside. In the original wok or frypan, add the vegetables, sauce and tofu nuggets. Put on high heat for 5 minutes and mix well. Serve with white rice and garnish with chopped spring onion and sesame seeds.
