Sweet potato+black bean burger πŸ”πŸ€€ YES PLS. Recipe makes enough for 6 1/2 cup burgers!
Ingredients:
-1/2 onion, diced
-300g (2 medium) sweet potatoes
-160g cooked brown rice
-1 can black beans (drained-200g ish)
-60g walnuts (blitzed or chopped finely)
-1 tbsp brown sugar
-1 tbsp cumin
-1 tsp paprika
-1 tsp salt and pepper each
-oil for cooking
Method:
1. Heat oven at 200*C (fan), slice sweet potatoes in half and bake for half an hour.
2. Once cooked, peel away skin and mash in a bowl with the can of black beans.
3. Add all other ingredients, mashing the mixture to combine spices as much as possible.
4. Pre heat oven at 200*C again
5. Grease a baking tray then use a 1/2 cup measurer to spoon out the mixture and create 6 equal sized burgers!
6. Bake for 30-40 mins, but set a timer for 20 mins and flip them mid way through.
7. Serve with avocado, red onion, buns, etc!
